Instructions
Wash and dry the strawberries. Do NOT remove the stems or leaves.
Gather all ingredients and have them ready to go. Line a platter or baking sheet with waxed paper. Also, put the sprinkles in a shallow bowl and/or get the food coloring out if using that too.
In a double boiler, melt the chocolate chips slowly over a low simmer of water. See notes above on how to use a double boiler if this is new to you. Stir the chips constantly to melt evenly and slowly. Remove from heat as soon as all the white chocolate is melted and smooth.
Immediately begin dipping and twisting/rolling the strawberries one at a time in the white chocolate. As soon as each is covered about ¾ so that some red berry is showing, dip and roll into the red, white, and blue sprinkles.
Place each decorated strawberry on the waxed paper to rest. They will need to set and cool for about 30-60 minutes on the waxed paper.
Once they are set, they will release from the wax paper easily. When you are ready to serve them, place them on a serving platter and enjoy immediately.
If you make them ahead of time, you can store them on the waxed paper for up to 8 hours. Do NOT store them in the refrigerator or cover them. See notes above about storing them.
