Sweet, cold, fun, & fruity mango popsicles are best when made homemade. This easy recipe for the summer treat kids and adults love. A refreshing snack or dessert for kids and adults. Homemade popsicles with real fruit are healthy, low-sugar, low-calorie, vegan, vegetarian, gluten-free, & dairy-free.
In the blender bowl, add the mango chunks, lime juice, & corn syrup. Add ½ cup of water. Blend on high to puree until smooth. ** add more water for a puree that is more thin/smoother. We like one cup of water since we want a smooth popsicle without chunks or bits.
Taste test the puree with a tiny spoon. Add more corn syrup if you want it sweeter - do not add more than one more tablespoon or the popsicles will not freeze well due to the higher sugar content.** some mangoes will be more tart or more sweet so this will help adjust that.
Using a tiny tunnel, pour the mango puree almost to the top of each mold opening. Add wooden or plastic sticks once filled.
Place the filled popsicle mold into the freezer so it is level. Let them freeze for 4-8 hours.
To unmold the popsicles, run warm water along the sides of the molds and wiggle each popsicle free. Enjoy immediatley.See notes above for unmolding tricks & tips.
Store the popsicles in the mold or wrap each one individually in popsicle storage bags. They will last for up to 3 months in the freezer.
