For a quick protein breakfast, these ham & cheese Mini Egg Bites are the best. An easy recipe oven baked in a muffin tin is a weekday morning favorite. The perfect savory way to start your day or enjoy as a snack, lunch, or brunch.
In a medium bowl add the eggs and half & half. Whisk for 2 minutes until frothy.
6 large eggs, ¼ cup half & half
Add the salt & pepper, whisk again.
¼ teaspoon salt , ⅛ teaspoon black pepper
To a nonstick mini muffin tin with small cavities, divide the egg mixture evenly amongst each. Make each of them ⅔ of the way filled. There may be leftover egg mixture depending on the size of the eggs used or if using a 12-cavity pan. That is ok, set aside and make another batch.
Sprinkle in some onion, cheese, & ham to each egg mixture. Each muffin tin spot should be almost to the top (80% full).
½ cup diced ham, ½ cup shredded cheese, 1 green onion
Bake in the preheated oven for 8-10 minutes. The eggs will have puffed up like mini souffles and barely set. They will not be brown. Do NOT over bake or they will be rubbery and tough.

STORING & SERVING:
Serve while still warm & fresh.
Leftovers keep for up to 3 days in the fridge or 30 days in the freezer.
Reheat in the toaster oven or oven for 5 minutes (less chewy than the microwave)

Any toppings or items you love with your eggs works here. Any leftover meat or veggies are favorites.
Try diced cooked sausage or bacon instead of ham.
Use any shredded cheese; cheddar, swiss, & pepper jack are great.
Make it meatless, omit the ham & add extra cheese instead.
Leftover cooked broccoli, spinach, mushrooms, or squash are great additions.
DO NOT over bake - check them starting around the 8 minute mark if you oven runs hot.
