This easy.no-bake S'mores Bark is a tasty summer dessert. Rich chocolate covered graham crackers topped with gooey toasted mini marshmallows & golden grahams makes the recipe just like the campfire classic.
Line a baking sheet with a layer of the graham crackers. You may need to break them to fit them so the entire sheet is covered.
2 packages Graham Crackers
In a medium-sized microwave safe bowl, add the chocolate chips. To melt the chocolate, microwave it 30 seconds at a time. Stir the chocolate in between each interval and do not over cook - once there are only a few solid bits left it is done since as you stir it into the hot melted chocolate they will melt as well. NOTE: Mine took 3 30-second rounds.

Using an offset spatula spread the chocolate layer over the graham crackers. Cover the cookies evenly over the entire layer. Work fast so the chocolate does not cool and set too quickly.
Sprinkle on the cereal over the chocolate leaving some chocolate exposed. Follow up with the mini marshmallows. If needed, press them in a bit with the palm of your hand so they stick to the chocolate.
1 cup golden grahams cereal, 2 cups mini marshmallows
OPTIONAL STEP - use a kitchen torch at a horizontal angle to toast the marshmallows. Keep it lightly over the marshmallows just getting their tips so that the chocolate or other ingredients do not scorch. Brown until crispy & charred for that campfire roasted taste.
Let the chocolate bark set for 30 minutes in your refrigerator. You can also let it set at room temperature for 1-2 hours.
Once the bark is firm, use a sharp knife to cut it into 24 pieces. You can also break it with your hands into random shapes and sizes.
Notes
STORING:
Store bark in an air-tight container for up to a week. Place in a cool dry place such as pantry or cupboard so it does not melt. The refrigerator works too.
SUBSTITUTIONS or VARIATIONS:
Use small broken pieces of graham crackers on top as a substitute for the golden grahams. This makes it a 3-ingredient recipes.
Use colored mini marshmallows for a fun pastel treat, great for baby showers, Easter, or any holiday.
Use gluten-free graham crackers (Pamela's or Schar brands) for the bottom & broken pieces for the top to make this safe for celiac or those with allergies.
