Who doesn't love a taste of summer camping any time of year. This easy S'mores Bark is just the thing to enjoy the chocolate, marshmallow and graham combination whenever the craving hits.

Why this No Bake S'mores Bark Recipe is Better than all the Rest: My recipe includes a simple step for amazing campfire roasted marshmallow flavor that is 100% irresistible.
There is no oven needed for this simple dessert. All you need is a microwave to melt the chocolate - no stovetop double boiler either. You can even make this in your travel trailer or RV, work break room for a potluck, or dorm room - talk about EASY!

This was inspired by my recipe for S'mores Icebox cake. Ok, now we get microwaving!

Ingredients
All you need it 4 ingredients and 5 minutes to whip up this tasty dessert or snack. So no excuses; enjoy the gooey, chewy, chocolatey, & honey cinnamon combo today.
I am using both classic graham crackers for a sturdy base but also mini golden graham cereal for the top. Using both gives you that sandwich-like top & bottom graham cracker vibe that a traditional s'mores has.

Here are important notes for some ingredients:
- Graham Crackers - the honey cinnamon cookies are a must (gluten-free can be used too)
- Chocolate Chips - use milk, semi-sweet, or dark.
- Golden Grahams - the tiny cereal pieces are the perfect topper.
- Mini Marshmallows - the classic gooey chewy sweet that makes any s'mores to die for.

How to Make S'mores Bark
One of my favorite things about making any kind of homemade candy bark is that it is a great make-ahead dessert. It also travels well so it's one of the best potluck, bake sale, hostess gift, or holiday dessert.
Here are the easy steps for making S'mores Chocolate Bark:

1 - Heat & Layer
For this recipe you will need a medium-sized microwave-safe bowl (my favorite glass bowl set is perfect for this), a 12x17 sheet pan/baking tray (or similar size), a kitchen torch, & a small offset spatula.

Line a nonstick baking sheet (or use nonstick spray/parchment) with a layer of the graham crackers. You may need to break them to fit them so the entire sheet is covered as seen here.

In a medium-sized microwave safe bowl melt the chocolate in the microwave 30 seconds at a time. Stir the chocolate in between each interval and do not over cook - once there are only a few solid bits left (as seen here) it is done since as you stir it into the hot melted chocolate they will all melt
NOTE: Mine took 3 30-second rounds.

Using an offset spatula spread the chocolate layer over the graham crackers.

Cover the graham cracker layer evenly. Work fast so the chocolate does not cool and set too quickly.

Sprinkle on the cereal over the chocolate leaving some chocolate exposed.

Follow up with the mini marshmallows. If needed, press them in a bit with the palm of your hand so they stick to the chocolate.
2 -Set & Torch
This next step is optional but is what makes this to die for. If you ask me S'mores are just not a thing unless the marshmallows are charred, crispy, and toasty.

Carefully use a kitchen torch at a horizontal angle - this is so the marshmallows get cooked but the chocolate doesn't scorch. Lightly toast the marshmallows until crispy & brown for that campfire roasted taste.

Let the chocolate set at room temperature for 30 minutes in your refrigerator. You can also let it set at room temperature for 1-2 hours.
2 -Cut & Enjoy
Once the bark is firm, it is ready to cut or break into pieces.

Use a sharp chef's knife to cut it into 24 pieces. You can also break it with your hands into random shapes.

Enjoy! Each bite should have a combo of all the flavors and textures - crisp honey cookies, cinnamon golden grahams, roasted gooey chewy marshmallows, and rich chocolate yumminess.
Serving & Storing
This stores well for a week. Seal in an air-tight container and place in a cool dry place. Make sure it is not exposed to heat or sun (so it doesn't melt or soften).
I do not recommend freezing this. The graham crackers once frozen and then defrosted taste stale and come out soft and soggy.
When to Make S'MORES BARK : This is a summer favorite for 4th of July but I also love it for any holiday.
You can get pastel mini Jet-Puffed marshmallows to make it for Easter or a baby shower. Seasonal colored mini marshmallows make it for Halloween, Christmas, or Valentine's day too.

- #1 Tip - do not overheat the chocolate chips or they will seize up and get hard.
- Do not skip the step for toasting the marshmallows with a kitchen torch, this makes this gourmet.
- Instead of golden grahams, use cinnamon toast crunch or broken pieces of graham crackers as a topper.
- Kitchen torches are inexpensive, easy to use, & fun in this recipe or my 3-Ingredient Creme Brulee.

- Note to self, you do NOT need to eat all the oddly broken shapes when cutting this so only perfect pieces remain - my waistline reminds me!

FAQ
I like to use chocolate chips and some brand melt easier than others. Try one of these best melting chocolates which include some of my favorites like Ghiradelli, Nestle, and Guittard.
You can use gluten-free graham crackers, see my TIPS above for those brands. Golden grahams are NOT gluten-free so omit them. Use tiny broken gluten-free graham cracker cookie pieces on top instead.

- Let the chocolate bark set for 30 minutes in your refrigerator. You can also let it set at room temperature for 1-2 hours.
- Once the bark is firm, use a sharp knife to cut it into 24 pieces. You can also break it with your hands into random shapes and sizes.
Notes
- Store bark in an air-tight container for up to a week. Place in a cool dry place such as pantry or cupboard so it does not melt. The refrigerator works too.
- Use small broken pieces of graham crackers on top as a substitute for the golden grahams. This makes it a 3-ingredient recipes.
- Use colored mini marshmallows for a fun pastel treat, great for baby showers, Easter, or any holiday.
- Use gluten-free graham crackers (Pamela's or Schar brands) for the bottom & broken pieces for the top to make this safe for celiac or those with allergies.
