How to Make 2-Ingredient Chocolate Mousse
Gather your equipment for making this recipe. Most importantly have your hand-mixer, rubber spatula, and a medium-sized mixing bowl ready. You will also need 6 small bowls or dessert glasses to serve the chocolate mousse in.
In the mixing bowl add the sugar-free instant pudding mix. Next, pour in the cold heavy whipping cream.
Turn the mixer on low and begin mixing. Immediately move the speed up to medium-high. Beat for about 1 minute - it mixes fast!
It will thicken quickly. The chocolate mousse will be ready once stiff peaks can form. Turn the beaters off and if you drag them through the mousse and up, stiff peaks will stay up as seen below.
Hint: this will be a THICK mousse. It will not be easy to pipe this into glasses but you can try if you have a sturdy pastry bag and wide tip. I simply spoon it into clear dessert glasses. Divided the mousse evening into 6 servings.

Storing Chocolate Mousse
This no-bake recipe actually requires chilling time in the refrigerator. Therefore, this is a great make-ahead dessert that stores very well in the refrigerator. It will be good for 3-5 days stored in the individual cups in the refrigerator.
These ingredients don't stand up well to freezing. I do not recommend freezing chocolate mousse and really there will not be any still around after a few days. There will never be a need to freeze this good stuff.
Top Tip
If you do not like what many refer to as "pudding skin", that thick solid layer that forms on the top layer of pudding, you may want to wrap the mousse cups. Though the mousse does not get a thick skin like regular pudding, once it refrigerates longer than 24hours, the top will get a bit more solid with the rest below still light and fluffy. Simply wrap some plastic wrap over the top to keep the extra air out.
