Best Type of Pots & Pans for Cooking with Gas
When using a gas range, some materials are better when it comes to picking out a high-quality set of pots and pans. The high heat directly over a flame may warp or overheat some types of pots and pans. Technically you can use almost any cookware set but here are the kinds that hold up well vs those I do not recommend using.
The absolute best investment for your gas stove would be a set of pots and pans that have multiple layers of materials. A tri-ply of 3 layers helps hold, conduct, and evenly distribute heat in a sturdy pan that will not warp. That combination includes steel pans with an internal core or aluminum or copper.
Recommended for use on a Gas Stove
These materials are recommended when cooking on a gas stove. They hold up to high heat without warping. These types conduct heat evenly for a great cooking surface without any guesswork or constantly moving food to a "hot zone".
- Anodized Aluminum - hard anodized aluminum cookware in my opinion is the ultimate cookware for a gas stove. It heats quickly, and evenly. Plus it is super durable which makes it a great buy. (I have had my set for over 15 years!)
- Copper - similar to aluminum, conducts heat evenly. It is pretty and often more expensive than anodized aluminum.
- Stainless Steel - very durable and heats quickly and evenly. Aluminum-clad stainless steel is the best.
Not Recommended for a Gas Stove
These types of cookware can be used on a gas stove but are not as favorable. These materials are not recommended for use on gas burners. They tend to be too soft which causes warping or have colors & materials that may chip. These are not good for standing up to the instant burst of heat that comes from cooking with gas.
- Aluminum - is often too soft & lightweight which causes it to easily warp. I only recommend these types of pots and pans if they are anodized.
- Painted/Colored Cookware - these may chip, discolor, or warp.
- Glass - is not traditionally a good conductor of heat which may result in uneven cooking. It can also easily scratch or be scratched when dragged across gas burners.

If you are a steak fan, you may want to make sure you have the best pan for searing a steak. These pans are great for going from the gas burner to the oven. They heat evenly and can withstand going into the oven to finish off that perfect juicy steak with a lovely flavorful crust.
Cast iron is still the gold standard for cooking a steak. It is also a great pan for frying chicken over gas. Make sure you warm the pan up so that it is blazing hot before you put that steak in the pan. If you want a pan that is not cast iron for cooking a steak, carbon steel is the next best bet.

Best Copper Pans
First off, the copper coating is different than copper pots and pans. The difference between copper pans and copper-coated pans is simple, only one is actually made of sturdy high-quality copper. The coating for some pans is a copper-colored nonstick ceramic but the inner construction of the cookware is often aluminum. What I am recommending are true copper pans.
Copper can leach into your food, so you want a copper pan that is coated with another material, like stainless steel, for the safest gas stove cookware. You don't want to use unlined or bare copper pots since they are not safe. Most nowadays are three-ply pans that include copper, stainless steel, and aluminum. This combination makes them great for cooking over gas.

What about Cast Iron Or Ceramic Pans?
Both cast iron and ceramic pans are good to use on a gas stove. I would say they fall in the middle between those I highly recommend and those I do not recommend. To start, both are often VERY heavy.
Because of this, they tend to be hard to work with but they also take a long time to heat up. But once they do, they cook evenly and are just fine for cooking on your stovetop, especially for hearty meals that finish in the oven.

Nonstick coatings have evolved over the years. Ceramic nonstick coatings are made without PFAS chemicals. Look for cookware with PTFE for this is safe. PFOA is considered toxic and is even banned in Europe for example. Teflon used to be made of PFOA but is now PTFE.
If you have a gas stove, it is best to use stainless steel, copper, and aluminum that has been anodized. Cast iron is also good to use but does take some time to heat up.
First, they look different. Aluminum will be a dull flat grey color. However, stainless steel will look polished and shiny like silver. Aluminum will be more lightweight than stainless steel. The benefit of stainless steel is that is it non-porous which makes it more sturdy, and non-corrosive, and food tends to stick less if cooked at the right high heat temperature.
Copper pans sure are pretty. However, once you start using them regularly they will start to discolor and lose their luster. Handwashing is best. Barkeepers Friend is a great inexpensive cleaner. Another great way to remove tarnish is with a copper cream.
