The texture of this mousse is chocolatey and has a dense but creamy mouthfeel that is so comforting. A little goes a long way with this sweet dessert and every bite will satisfy your sweet tooth. The first time I made this, my youngest was trying to scrape every bit out of his bowl - enough said.

    This homemade mousse is a tasty sugar-free recipe that is keto-approved and diabetic-friendly. Plus only two ingredients are needed for this quick recipe. Yes, you read that right. The simplicity of it plus the amazing taste is going to make it your new favorite keto dessert. This chocolate mousse recipe is eggless, made without cocoa, and doesn't take a lot of stirring.     RECIPE HACK - This is what I consider a serious recipe hack. Traditional French chocolate mousse recipes call for about 5 ingredients. It will also take about 20 minutes to make with several steps involved. Then you have to wait 4+ hours for it to chill.

    Who really wants to wait for hours for chocolate mousse to be ready? Not me. This recipe is 2 ingredients. It is mixed in one step and it is ready to eat immediately. You can now enjoy instant chocolate mousse or whipped pudding in minutes. You are welcome.

    Ingredients for Keto Chocolate Mousse

    There are not many recipes with fewer ingredients than this one. All you need is 2 ingredients to make this homemade chocolate mousse. The sugar-free pudding mix and the heavy cream are what make this a rich and satisfying low-carb dessert.

    How to Make 2-Ingredient Chocolate Mousse

    Gather your equipment for making this recipe. Most importantly have your hand-mixer, rubber spatula, and a medium-sized mixing bowl ready. You will also need 6 small bowls or dessert glasses to serve the chocolate mousse in.

    In the mixing bowl add the sugar-free instant pudding mix. Next, pour in the cold heavy whipping cream.

    Turn the mixer on low and begin mixing. Immediately move the speed up to medium-high. Beat for about 1 minute - it mixes fast!

    It will thicken quickly. The chocolate mousse will be ready once stiff peaks can form. Turn the beaters off and if you drag them through the mousse and up, stiff peaks will stay up as seen below.

    Hint: this will be a THICK mousse. It will not be easy to pipe this into glasses but you can try if you have a sturdy pastry bag and wide tip. I simply spoon it into clear dessert glasses. Divided the mousse evening into 6 servings.

    Substitutions & Special Diets

    With such a simple and easy recipe, there is no room for substitutions of this recipe. You need to make sure you are using full-fat heavy whipping cream to get the thickness that comes with mousse. You also must use sugar-free instant pudding mix otherwise it will not mix up or it will not be low-carb.

    This mousse recipe is already naturally gluten-free and nut-free but it is not grain-free. Keep in mind that the low-carb chocolate mousse is also keto-friendly and diabetic-approved. It does have a bit of cornstarch and maltodextrin in the sugar-free pudding so it is what many of us call "dirty" keto but occasionally you just need a sweet treat so go for it.

    Besides how amazing this chocolate mousse tastes and how easy it is, the beauty of this recipe is how easy it is to make other flavors of mousse. You can use any sugar-free instant pudding mix to make low-carb mousse for dessert. Grab your favorite and get mixing.

    Carb & Calorie Information

    How many calories and carbs are in chocolate mousse. This version is low-carb with only 4.7 net carbs per serving. The sugar-free recipe is high in fat with almost 15g per serving. This makes for a good fat bomb treat if you are on a high-fat keto diet. All for only 158 calories which is good considering so many desserts are 500+ calories.

    So much to love and not feel guilty about with this tasty mousse when you compare it to traditional chocolate mousse. Classic chocolate mousse recipes average 400 calories, 35 carbs (31 sugars) & 30 grams of fat. This low-sugar "healthier" chocolate mousse recipe is not only ½ the fat & calories but it has 70% fewer carbs!!

    Storing Chocolate Mousse

    This no-bake recipe actually requires chilling time in the refrigerator. Therefore, this is a great make-ahead dessert that stores very well in the refrigerator. It will be good for 3-5 days stored in the individual cups in the refrigerator.

    These ingredients don't stand up well to freezing. I do not recommend freezing chocolate mousse and really there will not be any still around after a few days. There will never be a need to freeze this good stuff.

    Top Tip

    If you do not like what many refer to as "pudding skin", that thick solid layer that forms on the top layer of pudding, you may want to wrap the mousse cups. Though the mousse does not get a thick skin like regular pudding, once it refrigerates longer than 24hours, the top will get a bit more solid with the rest below still light and fluffy. Simply wrap some plastic wrap over the top to keep the extra air out.
