Best Stovetop Temperature
I love a low and slow method when making scrambled eggs. This is what I use in. my recipe for SOFT SCRAMBLED EGGS. With a pat of butter, these eggs come out creamy, fluffy, & moist every time.
In a pot or pan, always cook scrambled eggs on medium-low. My stove is set to 4 & I love how they turn out.
Gently stir & fold the eggs as they cook & they usually take about 12-15 minutes. The eggs will not be runny but still have a "wet" shine to them.
Internal Temperature Guidelines
Are my eggs ready yet? Here is how to check scrambled eggs for internal temperature. Plus a guide to the minimum temperatures & maximums to aim for.
- 145-150°F (63-66°C) = perfectly cooked moist & creamy.
- 155°F (68°C) = overcooked & dry.
- 160°F (71°C)= rubbery & tough.
NOTE: 144°F is the egg handling & safety minimum according to eggsafety.org. However, for the best silky smooth texture I found just a bit more time is ideal.
How to Check if Eggs are Done
An quick-read thermometer is the best kitchen tool for cooking any protein. I have two made by ThermoPro (one in the kitchen & one for our BBQ area) & it works great.
Poke the tip into the center of the eggs in your pot & pan & VIOLA - the temperature appears in a second. It is easy to use, clean, & super cheap!

Ok it is almost time to get cracking. Here are my final words of advice when making scrambled eggs at home. These will lead you to success.
- Use room temperature eggs, they combine easier with no noticeable streaks of white & yolk separated. I love using an automatic whisk to really get air in there.
- ALWAYS cook over medium-low heat & I like to use a pot versus a skillet when making large more than 6 eggs at a time.
- Gently fold while cooking so the eggs do not get tough.
- NEVER cook scrambled eggs to 155°F or higher!
- Enjoy these on their own with salt & pepper to taste & some bacon made in the toaster oven.
