Electric Stove vs Induction
This article will focus on traditional electric stoves. For clarity, this is not the same as an induction stove. Induction stoves use minimal electricity to produce the electromagnetic current that heats the cooktop.
There are two types of electric cooktops, coil or smooth. Coil cooktops have coils that sit on the surface or in a cavity. Smooth electric cooktops have radiant elements underneath the ceramic or glass surface.
Best Types of Pots & Pans for Electric Stoves
Do you need special pans for cooking on an electric stove? All kinds of pots & pans work on electric & glass top stove. Technically you can use almost any cookware set but here are the kinds that hold up well vs those I do not recommend using.
The absolute best investment would be a set of pots and pans that have multiple layers of materials. A tri-ply (3 layers) helps hold, conduct, and evenly distribute heat in a sturdy pan that will not warp. That combination includes steel pans with an internal core or aluminum or copper.
Recommended Materials
These materials are recommended when cooking on an electric stove. They hold up to high heat without warping. These types conduct heat evenly for a great cooking surface without any guesswork or constantly moving food to a "hot zone". Many are dishwasher safe & can from stovetop to oven if needed.
- Anodized Aluminum - hard anodized aluminum cookware in my opinion is the ultimate cookware for a gas stove. It heats quickly, and evenly. Plus it is super durable which makes it a great buy. (I have had my set for over 15 years!)
- Stainless Steel - very durable and heats quickly and evenly. Aluminum-clad stainless steel is the best.
- Cast-Iron or Ceramic - this sturdy material can last for decades if not for generations. Make sure to purchase coated or smooth surfaces.
Not Recommended Materials
These types of cookware can be used but are not as favorable. These materials are not recommended for use on electric coils or smooth surfaces. They tend to be too soft which causes warping or have materials that may chip or scratch.
- Aluminum - is often too soft & lightweight which causes it to easily warp. I only recommend these types of pots and pans if they are anodized.
- Unfinished/Rough-Edged Cookware - these uneven bottoms & edges can chip, scratch, & damage flat ceramic & glass stovetops.
- Glass - is not traditionally a good conductor of heat which may result in uneven cooking. It can also easily scratch or be scratched when dragged across coils.

Best Pan for Searing Meat or Fish
These pans are great for going from the burner to the oven. They heat evenly and can withstand going into the oven to finish off that perfect juicy steak or flaky fish with a lovely flavorful crust.
Cast iron is still the gold standard here. If you want a skillet that is not cast iron for searing, carbon steel is the next best bet.

Best Ceramic & Cast-Iron
Both cast iron and ceramic pans are good to use. I would say they fall in the middle between those I highly recommend and those I do not recommend. To start, both are often VERY heavy.
Because of this, they tend to be hard to work with but they also take a long time to heat up. But once they do, they cook evenly and are just fine for cooking on your stovetop, especially for hearty meals that finish in the oven.

Can you use nonstick pans on a glass stove?
Yes, nonstick pans are safe to use on a glass stove. Make sure you purchase pans with a safe nonstick coating. Those I recommend are shared in the above section.
What nonstick coating is not toxic?
Nonstick coatings have evolved over the years. Ceramic nonstick coatings are made without PFAS chemicals. Look for cookware with PTFE for this is safe. PFOA is considered toxic and is even banned in Europe for example. Teflon used to be made of PFOA but is now PTFE.
What's the difference between stainless steel & aluminum pans?
First, they look different. Aluminum will be a dull flat grey color. However, stainless steel will look polished and shiny like silver. Aluminum will be more lightweight than stainless steel. The benefit of stainless steel is that is it non-porous which makes it more sturdy, and non-corrosive, and food tends to stick less if cooked at the right high heat temperature.
Stainless steel, cast iron, and aluminum cookware are sturdy enough for cooking over an open fire. However, I recommend purchasing a campfire cooking kit instead of using the same pots and pans you use at home. They are inexpensive, lightweight, & easy to store & clean.
