    Rolo Stuffed Ritz Crackers

    I don't know about you but I sure cannot resist anything sweet & salty. But these Rolo Stuffed Ritz Crackers are also crunchy & gooey - OMG, hold me back! Good thing all you need is 2 ingredients & 10 minutes to make this dessert.

    A few years ago I made these for the neighbors in the annual Christmas goodie gift boxes. They were (and still are) one of the most talked about treats. I have made them probably a dozen time for just about any occasion - little league parties, potlucks, & more.

    You have to try these & see why. Make sure to buy plenty of Rolos so you have extra to also make my Valentine's Day Caramel Pretzel Bites.

    The Why

    Why do I need to make this recipe? Here are all the reasons why I cannot get enough of this recipe & why you will love it too.

    • Quick recipe for last minute sugar cravings.
    • Easy enough to do in your RV oven or a toaster oven in your dorm room.
    • Great for holidays - Christmas, Easter, Halloween, & Thanksgiving.

    This was inspired by my recipe for Chocolate Peanut Clusters, which uses only a couple ingredient. If you are a fan of Christmas Crack with saltines, chocolate, & toffee, you will love these too.

    Ingredients

    Not much to say here other than all you need are round buttery flaky crackers & chocolate-covered caramel candies. Plus you will need a baking sheet to cook & assemble them on. Easy peasy or what?

    Here are the ingredients needed to make ritz crackers stuffed with Rolo candies.

    • Ritz Crackers - this is the salty & crunchy part of the recipe.
    • Rolo Candies - this is the sweet, chewy, & gooey part of the recipe.

    How to Make Rolo Stuffed Ritz Crackers

    No rocket science here. The hardest part of this recipe is unwrapping all the Rolo caramel chocolate candy pieces. This is where I recommend you get the family involved, the more hands the merrier & faster.

    Here are the easy steps for making Ritz & Rolo sandwich crackers.

    1. Prep the Bottom Halves
    2. Bake in the Oven
    3. Add the Top Crackers

    1 - Prep the Bottom Halves

    Begin by preheating the oven to 350°F. While it is preheating, start unwrapping the Rolos.

    Place half of the Ritz crackers onto the baking pan face side down. Top each with one unwrapped Rolo candy on the center of each cracker.

    2 - Bake in the Oven

    Bake in the oven for 5 minutes. The chocolate and caramel will soften but not melt. The Rolos should still be pretty much in tact but squishy.

    Hint: Set a timer - these go fast and if you step away you end up with a melted mess!

    3 - Add the Top Crackers

    Remove from the oven. Immediately, place the second cracker face side up onto the warm Rolo. Do a slight press & turn to squish the Rolo so it spreads almost to the edge.

    Let the cracker sandwiches cool. They will set & stay together when picked up. ENJOY!

    Store for up to 10 days in a cool dry place in a Ziploc or container with a lid.

    Top Tips & Equipment

    All of these great tips are shared in the recipe card. But these are so good and important they are worth highlighting so you don't miss them.

    • Work fast when they come out of the oven so you get the tops on before they cool & set.
    • You can make a small batch in the toaster oven.
    • No special equipment needed which makes this so simple.

    Final Notes & Behind the Scenes

    Here is my recipe for success - including what I learned, funny stories or bloopers, and more from creating & testing this recipe.

    • This is a fun recipe to make with the kids. But make sure they don't eat all the Rolos as they unwrap them (I admit I do eat a few myself)
    • For a gluten-free version use a substitute brand like Lance's.
    • Don't step away; these cook fast! I forgot to put on the timer once & the Rolos melted. Messy but still edible.
    • Try making colorful holiday versions - dip half in white chocolate & add red & green sprinkles for Christmas for example.

    Ingredients
      

    • 100 Ritz Crackers
    • 50 Rolo candies
    Prevent your screen from going dark

    Instructions
     

    • Preheat oven to 350°F.
      Unwrap the Rolo candies, set aside.
    • Place half of the Ritz crackers onto the baking pan face side down. Top each with one Rolo candy on the center of each cracker.
    • Bake for 5 minutes in the preheated oven. The Rolos should still be in tact but soft & just starting to melt.
    • Remove from the oven. Immediately, place the second cracker onto the melted Rolo face side up. Do a slight press & turn to squish the Rolo & it spreads almost to the edge.
    • Let cool & set. Enjoy.

    Notes

    STORING:
    These store for up to 10 days in an air-tight container. Keep in a cool dry place like a pantry or cabinet. 
    TIPS FOR SUCCESS:
    • Set a timer & do not walk away - these bake fast.
    • Work fast when adding the second cracker so the chocolate doesn't harden.
