    This simple old-fashioned recipe for an Easy Blueberry Cobbler is crazy good. It has a homemade biscuit topping & fresh blueberries bursting with deliciousness. Serve with some vanilla ice cream for the ultimate summer dessert.

    This is a classic southern favorite like my Strawberry Peach Cobbler. The fruit filling & sweet soft dumpling topping makes it irresistible.

    Here is what is needed to make this recipe. Ripe juicy berries are the star. A real cobbler does not have a pastry or pie crust & you will not find any of that madness here.

    Here are the ingredients needed to make blueberry cobbler from scratch.

    • Fresh Blueberries - ripe fruit when in season is the best.
    • Lemon - fresh juice & zest pairs well with blueberries.
    • Vanilla Extract - a touch of floral notes to the filling.
    • Sugar - to sweeten the berry filling & in the topping.
    • Cornstarch - just a touch to thicken the blueberry filling.
    • All-Purpose Flour - the standard pantry staple makes the cobbler topping.
    • Baking Powder - I like a bit more than other recipes for a really fluffy & airy texture to the topping.
    • Salt - a touch to boost the flavor & balance the sugar.
    • Milk - whole full-fat dairy renders the best biscuit taste & texture.
    • Salted Butter - for the best buttery rich biscuit batter & the base of the dessert.

    How to Make Blueberry Cobbler

    This recipe is how my grandma would make it from scratch. The topping is a sweet batter that is part biscuit and a tad bit similar to cake batter. It's the best of both worlds.

    Plus the filling to topping ratio is amazing. If you are all about more fruit, less crust - this recipe is for you.

    Here are the easy steps for making Homemade Blueberry Cobbler.

    1. Make the Blueberry Filling
    2. Mix the Biscuit Batter
    3. Bake in the Oven

    1 - Make the Blueberry Filling

    Preheat the oven to 350°F. Once it is ready to go, time to start making the blueberry filling in 3 easy steps. No bowl needed, now how is that for EASY!

    • Place 8x8 pan with 4 tablespoons of butter in the oven for 5 minutes to melt.
    • Brush the melted butter around all sides of the pan so the cobbler will not stick.
    • Add the blueberry filling ingredients to the pan, stir to combine.

    2 - Mix the Biscuit Batter

    Next, time to make the topping. It comes together in just one minute. Mix this by hand, no hand mixer needed.

    • Stir or whisk together the batter ingredients in a large bowl.
    • Spoon on large dollops of the batter over the blueberry filling. Leave some areas without topping so the berries can be seen & bubble up.
    • Sprinkle with ½ tablespoon of sugar for added crunch & browning.

    3 - Bake in the Oven

    Bake in the preheated oven for 40-45 minutes. The top should be golden brown on the edges & the filling will be bubbling up.

    Serving Suggestions

    Let the cobbler cool for 15 minutes. The filling will be HOT!

    Scoop out portions while warm. Be sure to get an even amount of blueberries to biscuit.

    Serve in bowls & add a scoop of vanilla ice cream. The hot & cold combination is all the things!

    Hint: If bringing this to a potluck or it needs to travel, bring along a can of whipped cream instead of ice cream. Scoop, squirt, & serve!

    FAQ

    Can I use gluten-free flour?

    I have not tried that with this recipe but I have a Gluten-Free Apple Cobbler recipe that is fantastic.

    Will this work with frozen blueberries or other berries?

    Yes. You can substitute fresh for frozen in this recipe. I do recommend defrosting and draining them - so the cobbler isn't soggy.

    You can also use any berry or combination you desire. Substitute the fresh blueberries with the same amount of blackberries, strawberries raspberries, or make it a triple-berry combo.

    Ingredients
      

    • 4 tablespoons salted butter

    Blueberry Filling Ingredients

    • 3 cups fresh blueberries
    • 1 teaspoon lemon juice
    • 1 teaspoon lemon zest
    • 1 teaspoon vanilla extract
    • ½ cup granulated sugar
    • ½ tablespoon cornstarch

    Biscuit Topping Ingredients

    • ¾ cup all-purpose flour
    • 2 teaspoons baking powder
    • ½ cup granulated sugar
    • ¼ teaspoon salt
    • ⅔ cup milk
    • 4 tablespoons butter melted
    • granulated sugar for sprinkling on top

    Instructions
     

    • Preheat oven to 350°F.
    • Add 4 pats of butter, 1 tablespoon each, to the bottom of an 8x8 pan. Place in the oven for 5 minutes to melt the butter. Remove pan from the oven & using a pastry brush, brush the butter up all the sides so the cobbler will not stick later.
    • Next, add the blueberry filling ingredients to the melted butter. Toss to coat and spread out evenly in the pan.
    • In a large mixing bowl add the dry ingredients for the batter - whisk to combine.
    • Spoon the batter over the blueberry mixture. Sprinkle with a little bit of sugar for a bit of crunch at the end.
    • Bake in the preheated oven for 40-45 minutes.
    • Once the top is a light golden brown and the edges are bubbling, remove from the oven. Let cool on the counter for a minimum of 15 minutes - filling will be HOT!
    • Serve warm - add ice cream, whipped cream, or a dusting of powdered sugar if desired.

    Notes

    SUBSTITUTIONS:
    • Can use any fresh berry or combination in equal amounts.
    • If using frozen blueberries, defrost & drain first.
    STORING & REHEATING:
    • Store in the refrigerator for up to 5 days.
    • Reheat in the microwave for 30 seconds each serving or the baking dish in a 350°F oven for 15 minutes.
