    Keto Muffuletta Sandwich

    Muffulettas are a New Orleans sandwich institution. Make this at home for a keto and gluten-free version to enjoy the best Italian meats, cheeses, and olive salad goodness.

    Homemade fathead dough is used to make the grain-free rolls for this sandwich. You can even make smaller rollers for muffuletta sliders which are fun for parties.  The olive salad is similar to giardiniera and other jarred pickled vegetables or relishes.

    I worked hard to perfect a traditional muffuletta sandwich that was authentic but is also low-carb, grain-free, gluten-free, and keto-friendly.  It has all the flavors that make this New Orleans classic so famous and delicious so you will just love it. There are so many reasons why I love this gourmet sandwich besides being a great keto option.  It does NOT include mayonnaise (which if you read my about me page, is one food I do not like - Meet Angela), it has so many great deli meats and cheeses, and it is salty heaven with the olive salad. 

    These gigantic sandwiches traditionally use round loaves of bread that are stuffed full of olive salad, cold cuts, and cheeses.  It is almost a keto-friendly from the beginning so I was thinking how easy it would be to make keto-friendly bread and transform this sandwich for the upcoming Mardi Gras.  It is also easy to make this paleo-friendly by leaving out the cheese and making your favorite almond flour rolls.

    What is a Muffuletta?

    To top it all off, it was invented by Italian immigrants which makes me proud to honor my heritage.  The original muffuletta sandwich was invented by Italian immigrants in New Orleans using the round bread that goes by the same name, muffuletta. The first sandwich has an origin of being created at Central Grocery, Co in 1906. I will visit this amazing city one day and a stop at Central Grocery, Co is a must-do.

    The meat cheese combo in this recipe is the traditional muffuletta combination and I suggest using this combination so that you get the true taste of New Orleans.  Mardi Gras is happening now and I hope you enjoy this.  I am sure you will find this so delicious that this recipe will become more than an annual sandwich tradition in your family.

    How to Make Keto Fat Head Rolls

    These amazing sandwiches start off with a keto fathead dough recipe I use for many things.  It starts with these ingredients:

    It is a quick homemade Fat Head Dough recipe that works for so many things, especially burgers, sloppy joes, and sandwiches like this keto muffuletta sandwich.   Follow the FAT HEAD KETO ROLLS recipe - they take about an hour to make including the 30 minutes resting time - so plan ahead.   When they are done they will look like this.

     

    Keto Muffuletta Sandwich

    For the Olive Salad:

    Combine all ingredients in a bowl or mason jar. Stir or shake together to incorporate all together. Place in refrigerator for at least 30 minutes. Overnight is even better to let all flavors marinate together for enhanced flavor.

    While the rolls cool, get the olive salad and the cold cuts ready.

    How To Make a Muffuletta Sandwich:

    Hollow out a small section of each side of the roll. Be sure to not go all the way through and create a hole. Place each roll side down and in each hollowed-out section, fill with the olive salad. On top of one side place 4 slices of salami and 2 slices of ham. On the other side, place 1 slice of provolone and 1 slice of swiss.

    If you have large slices you can cut them in half and stack both on there or just put 2 halves on each. Place each side together for a fully assembled sandwich. Press down slightly with the palm of your hand to ensure it will hold together. Slice in half and enjoy.

    Make the Muffuletta Sandwich Ahead of Time and Store

    Most muffuletta sandwiches taste better the longer they sit and marinate all the flavors together.  I love making a regular version the night before to enjoy the next day - the hearty bread typically still holds up.  However, with this version, the rolls will not hold up as well but they can still be made ahead and assembled for the most part.   Simply assemble the sandwiches but hold on adding the olive salad. Wrap them up tightly and store them in the refrigerator. When it comes time to eat your keto muffuletta sandwich, just unwrap and lift the top bun to add the olive salad and then enjoy.

    Ingredients

    Olive Salad

    • ¼ C jar diced pimientos drained
    • ¾ C green olives minced
    • ¾ C kalamata olives minced
    • 1 garlic clove minced
    • ¼ C olive oil
    • 1 tablespoon red wine vinegar
    • ½ tsp black pepper

    Sandwich Ingredients

    • 12 slices salami
    • 6 slices capricola / ham
    • 3 slices provolone
    • 3 slices swiss cheese

    Instructions
     

    • Make the Fat Head Rolls recipe for the bread for these sandwiches.
    • For the Olive Salad:
      Combine all ingredients in a bowl or mason jar. Stir or shake together to incorporate all together.
    • Place in refrigerator for at least 30 minutes. Overnight is even better to let all flavors marinate.
    • To Assemble the Sandwiches:

    Each FAT HEAD DOUGH ROLL =
    EACH ROLL = 140 calories, 4 net carbs, 14g protein & 7.5g fat
    Each serving of OLIVE SALAD (about ⅙ of the total made) = 
    120 Calories, 2.7 net carbs, .3 protein & 12.5 fat
    The remaining ingredients you use for the meats/cheeses will add to these totals for your full nutritional information.

        Please come back and share what you think of the recipe, especially the bread. If you do not like olives you can make them with pickled giardiniera mix from a jar versus the homemade olive salad.

        You can skip making the Fat Head dough rolls and try regular bread. Though I warn you, anyone I have had try this with the keto rolls is in awe how great it is! I did it for a potluck and they were GONE before even two slider rolls were taken.
