What are "Chaffles"?
Chaffles are low-carb waffles made of cheese and eggs. Hence the "chaffle" name - cheese + waffle. If you are on a keto egg fast, I can see this being a menu item to help get you out of a keto weight loss plateau.
This recipe makes a large serving. Each one is high in fat and has less than 3 net carbs & great macros for your daily fat. This makes them perfect for maintaining ketosis.
Ingredients for Basic Chaffles
This is all you need to make these. It is easy to make with only 2 ingredients and the use of a Belgian waffle iron to use as your chaffle maker.
There is no all-purpose flour, almond flour, or coconut flour in this chaffle recipe. You likely have all you need in your refrigerator right now.
This chaffle recipe is low-carb, keto, grain-free, gluten-free, nut-free, and diabetic-friendly. Here is what you need.
- Eggs - the protein that will hold this keto waffle together.
- Shredded Cheddar Jack Cheese - the flavor is all right here!

How to Make Basic Chaffles
It is super quick & easy to make these. In less than 10 minutes you will bite into one of these & enjoy every bite. Here are the steps for making keto waffles.
- Preheat the waffle iron
- Mix up the batter
- Pour into the waffle maker
- Cook for 4 minutes
1 - Preheat the waffle iron: While your Belgian waffle iron is heating up, time to simply scramble the eggs in a bowl.
2 - Mix up the batter: It takes only 2 minutes to mix up this batter. In a medium-sized mixing bowl add the eggs & scramble them. Next, add the 1.5 cups of shredded cheese and stir until combined.
3 - Pour into the waffle maker: Once the waffle iron is preheated and ready to cook, it is time to add the batter. Pour the batter evenly over the waffle iron. For my iron, it fills it up perfectly & uses all the batter.
This recipe will puff a bit but not a ton like traditional waffle batter so it is ok to fill it up. I had ZERO overflows and mess. Another bonus of this recipe!
4 - Cook for 4 minutes: After 4 minutes, they are ready. They should be golden brown with crispy delicious edges. Use a fork to pierce an edge and pull out of the waffle iron. Place on a plate and enjoy while warm. Or see the next section on how to enjoy them with tasty variations.

Storing & Reheating Chaffles
Making chaffles ahead of time is also a great time saver and helps you stay on track with your diet. I do make these ahead of time and they can be frozen.
Store leftover keto waffles in the refrigerator for up to 3 days. They can also be frozen easily. Freeze each on sheets of parchment paper in either a single layer. Once frozen they can be stacked and in a freezer ziplock bag sealed air-tight and then frozen for up to 30 days.
To enjoy later, simply defrost each overnight in your refrigerator. They will NOT be as crisp as they are straight from the waffle iron but can be warmed in the oven or microwave.
FAQ
No, you can use any waffle iron for this if you do not have a Belgian waffle iron. They can be made in a mini dash or regular waffle iron using less batter & will cook in less time.
Please note that this batter makes 2 servings. Therefore, if you want to know the calorie and carb count you need to change it based on how many chaffles you get out of the same batter.
Since this recipe is made without any type of flour, I do not recommend adding keto sweeteners. It would not result in a good texture or flavor combined with eggs & cheese.

- Belgian waffle iron
Ingredients
- 2 large eggs
- 1.5 C jack & cheddar cheese shredded
Instructions
- Plug in the waffle iron to preheat.
- While it is heating up, crack the eggs into a small bowl and whisk to scramble. Next, add the shredded cheese and mix to combine.
- When the waffle iron is ready, pour the mixture into the waffle iron. The batter makes 2 Belgian-sized chaffles. Each waffle cavity can be filled completely. This batter will expand but not as much as regular waffle batter.
- Close the waffle iron lid and let cook for 4 minutes. Once ready, lift the lid and pierce an edge of a chaffle with a fork to lift and remove.

I already tried this recipe out 2 times since I have read this post. I love them. the are so delicious. The only problem I had was they didn't come out of the waffle maker quite as pretty but it was just breakfast and not presentation I that I was going for.
